The Crazy Science behind Scallion Pancakes (and other doughy things) part 1 + tomorrow's workout 💪( 4/12/21 - 8am PST / 11am EST)

Thanks to Sanjay for standing in for me while i nursed an injured back. My streak of 112 straight workouts came to a crashing end but it was good while it lasted.

On to Scallion Pancakes
Most people who have gotten lunch at a restaurant in any of the Chinatowns across the US have probably tried scallion pancakes at some point in their lives. And for most of those people, it’s probably surprising to find out there are tons of versions of scallion pancakes. There’s a really thin, super crispy version, a fat thick almost empanada like version, any a bunch of others in between.
When I lived in Taiwan for 6 months right out of college, I fell in love with the local version of Scallion Pancakes. It’s fluffier and less fried oil puck like which allows you to do cool things like use it as a taco shell. In particular there is a famous stand on Yong Kang St. in Taipei that is what I would describe as my platonic ideal of a scallion pancake (photos from an actual visit in 2019 below)
Without going into too much detail in one post, just know that I sort of got obsessed with trying to recreate it on my own.
For something whose ingredient list is so stupidly simple (flour + water + oil) recreating a very specific type of scallion pancake is not simple.
Behind those 3 simple ingredients is a list of variables that will make your head spin
Type of flour (gluten level)
temperature of water
type of oil
ratio of all ingredients
resting time
thickness of pancake
rolling methods
cooking methods (steam, high heat, low heat, pressing)
and more
