Rolling out Scallion Pancakes + tomorrow's workout 💪( 4/15/21 - 8am PST / 11am EST)
One sort of leads to the other but the same way there are tons of variations to the end state of scallion pancakes, there are also tons of techniques to roll out and twist scallion pancakes while preparing.
There’s the circle then roll, there’s the rectangle then roll. There’s a school of thought around not too thin and a school of thought around paper thin. There’s the single spiral. The double spiral then stack. Sealing the edges, not sealing the edges. Lots of scallions, few scallions.
So many options.
Here’s what I found: I want my scallion pancake to mimic a croissant. That means as many layers as possible. To get as many layers as possible you have to roll your dough out as thin as possible. Then the initial roll doesn’t matter so much.
In my deep searches of the chinese internet (of which i can understand about 5%) I found a taiwanese woman describing how she does it. Check out how thin her roll out is
So thin it’s translucent
And then she doesn’t quite care how careful her initial roll is. It’s so thin that it’ll create a bunch of layers anyway. She’s messy with it and even says “buyong dan xin” 不用擔心 (don’t worry about being careful)
After that it’s the double spiral stack for me!
I’m sure no one’s enjoying reading this as much as I am writing it so i’ll try to wrap up this series tomorrow.
