THE RECIPE! A Final Scallion Pancake Post (maybe) + tomorrow's 🧘♀️YOGA 🧘( 4/16/21 - 8am PST / 11am EST)

On to the Ultimate Scallion Pancake Recipe 📜
I’m almost embarrassed to write out this recipe given all the lead up to it. When you read it, it’ll probably seem so dead simple you’ll wonder why there was such a fuss.
Ingredients
(Makes about 4 pancakes)
1 cup of flour all purpose flour
3/8 cup of boiling water
1/8 cup of room temp water
1/2 teaspoon of salt
2 Scallion stalks (Green onions)
Olive Oil
Steps
Chop green onion. First in half down the length of the green onion, then chopped up into small bits
mix flour and salt
add 3/8 cup of boiling water
lightly stir and let sit for 10 min
begin kneading dough for a couple min
sprinkle in remaining water (this step is honestly a feel based thing unfortunately. The dough should start forming in a way that has enough water where it isn’t flaking apart but not too much water that it’s so gooey and sticking to your hands even after many minutes. I know it should be more exact but i’m not there yet)
Knead dough 10-20 min where the dough is only lightly tacky and not sticking to your hands or the bowl
Cover the dough ball
Let rest for at least 30 min
Cut dough into 4 equal parts
On a well-oiled, large surface, roll out one piece of dough super thin (remember this photo from before)
Sprinkle olive oil on to dough and wipe around to cover dough - about 1-2tbsps will do and don’t worry if every square inch isn’t covered
Evenly sprinkle chopped green onions on to dough. This is a taste based thing. Notice that the woman didn’t add that many green onions (photo below is her final amount). Some people like much more but i’m good with just about that much
Roll up lengthwise (can be sloppy but i try to do it a little more organized than the photos below
Then roll towards the center from both ends into two spirals that meet
Once those two spirals are all the way rolled to the center (they’ll look like a pair of weird glasses), take one spiral and stack it on top of the other
Then push your thumb through the center of the stacked spirals (this will sort of seal the two spirals together)
use the flat of your palm to smash the stacked spirals into a little flatter disk (it will spring back up, but you want to smash down hard to keep the shape together)
Next, add a tablespoon of oil to a pan on med-low heat
Add your flattened out dough to the pan
Let the one side fry until you see the dough start to look transluscent - then you can flip
Let the pancake cook for about a minute.
Next start pressing the dough down either with a griddle press if you have one (below) or the back of a spatula
You can now flip from side to side until you get to a nice lightly brown color (pressing down on each side to make sure the middle cooks)
OPTIONAL: Fluffing - this is an expert technique that is not really necessary but give it a whirl. I took an animated gif of the woman from the video doing it but i honestly think I do it much better than her. The technique is essentially taking two spatulas or a set of tongs and spatula and scrunching the pancake together (more so than she’s doing)
And there you have it. Delicious Taiwanese style scallion pancakes. From here you can dip it in a number of sauces but a bit of soy sauce and vinegar as a simple sauce is a good place to start.
Garnish! fresh cilantro and chopped scallions is a nice add.. maybe even a fried runny egg (or an onsen tamago like in this photo)
Bonus: Amazing Sauce
Play around with these ingredients to make a completely fantastic sauce that makes scallion pancakes sing. I do this all by feel so don’t know the ratios super well. What i put below are rough guidelines, but add more or less to your taste
2 parts soy sauce
1 part vinegar
a bunch of chopped garlic
chopped or grated ginger (less than the garlic…maybe 1/2 the amout)
sesame oil 1/3 the amount of vinegar that you put in
a light sweetening agent (maybe honey or even a dash of sugar)
spice! i use hot cock sauce (below), but thai chilis, tabasco, almost anything will work
